We are talking spot prawns and how to buy them and how to cook them etc. The season just opened now and will run from 6-8 weeks.
Steam Fried BC Spot Prawns
1 lb Whole spot prawns
1 tbsp. Grape seed oil
¼ cup White wine or water (if using water add 2 or 3 slices of lemon )
1 tsp. Sea salt
Chopped parsley for garnish
In a pan or wok on high heat add the oil. Season the prawns with salt. Toss in the pan for a minute or two. Add the white wine or water and cover. Cook for another minute. Reduce the heat to medium/ low and continue cooking for another two minutes covered but tossing periodically . Place on a plate, garnish with parsley and serve with melted garlic butter.
