On a hot, sunny weekend, you can expect to wait up to half an hour in line to get a scoop of Earnest Ice Cream. But what is it like to be behind the scenes, running the store?
Erica Bernardi is the co-owner of Earnest Ice Cream, and says their store stands out because they pay attention to the quality of their product.
“We focus on local, seasonal ingredients as much as possible…I think the main thing about the business is our values. We focus a lot on our carbon footprint, how to reduce it, and being really transparent about the impacts we make.”
Bernardi says the main reason they started the business was to try and run it differently.
“Knowing we could do it our way, and feel good about it. And hopefully impact other people, and be able to educate them. So people see that you can be a business that is making a difference as well as making money.”
And why ice cream?
“Why not? Everybody loves ice cream. As far as creativity and flavours it really was kind of a blank slate that we could just take anywhere we wanted.”
