If you would love to make your living cooking, creating signature dishes, and being around food all day, maybe being a Chef is your dream job!
As part of Lynda Steele’s Dream Jobs segment, David Hawksworth, one of Vancouver’s top Chefs, joined Lynda in studio to talk about what being a Chef is all about.
“Working with great products, that’s the real fun part…Whatever it is, when you get a product that’s at the peak of quality in the season…that’s the real fun part. And then coming up with a dish, and seeing that come to fruition and seeing people enjoy it…that’s the real kicker for this job.”
Chef Hawksworth says he had always been employed in the restaurant industry, although not always as a chef.
“I was around 18 or 19 and had always worked in restaurants part time…just washing dishes, and I never really thought about being a chef. I finished high school…and kind of liked cooking and went to work at a place called The Beachhouse in Stanley Park.”
From there, Chef Hawksworth says he moved throughout different Vancouver restaurants, learning everything he could.He says the most exciting moment of his career was launching his namesake, Hawksworth Restaurant.
“I knew if we had the ability to open in that location, we would have a very good chance of surviving. That’s the real tricky part in the restaurant business is…the stats are horrendous, 98% of them go under! But we have a great team, so just seeing that happen…we have a cafe, we have a scholarship…”
The Hawksworth scholarship program was created to help young Canadian chefs get a head start in their career.
